The Cyprus delights, loukoumi, lokum, rahat lokum and many other transliterations is a family of confections based on a gel of starch and sugar. Traditional varieties are mostly gel, generally flavored with rose water, mastic, Bergamot, orange, lemon and so on. The confection is often packaged and eaten in small cubes dusted with icing sugar.
